With school out for summer and camps in full swing, I’m always on the lookout for quick, healthy snacks to keep everyone fueled and happy. That’s why these viral protein muffins have become a staple in my kitchen! They’re unbelievably easy – just dump, mix and bake. Even better? The kids love helping out (and sneaking a taste of the batter – shh!).

The secret? Three simple ingredients

What makes these muffins so special? You only need three pantry staples. Here’s what I use:

  • 1 Box Kodiak Muffin Mix (I love the Double Chocolate flavor for this recipe)
  • 1 Bottle Core Power Elite Pre-Made Protein Shake (chocolate, to keep it decadent)
  • 1 Oikos Vanilla Greek Yogurt (I use vanilla for a hint of creaminess)

That’s it! No eggs, no oil, no fuss.

Endless flavor possibilities

The beauty of this recipe is how flexible it is. Craving something fruity? Swap in a lemon muffin mix and blueberry yogurt for a lemon blueberry version. Want to keep it classic? Stick with chocolate—because who doesn’t love chocolate?

How to make viral protein muffins

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin. (I use a silicone muffin pan and grease the bottom and sides with coconut oil – trust me, these muffins can stick to regular wrappers like crazy!)
  2. Dump all three ingredients into a mixing bowl.
  3. Stir until just combined. Don’t overmix – it’s okay if there are a few lumps.
  4. Divide the batter evenly between 12 muffin cups. Don’t worry if they look full; these muffins don’t rise much.
  5. Bake for 20–25 minutes, or until a toothpick comes out clean.
  6. Let cool and enjoy!

Final tips

  • Silicone Muffin Pans: Highly recommended! Grease well with coconut oil to prevent sticking.
  • Storage: Keep leftovers in an airtight container for up to 3 days, or freeze for longer storage.
  • On-the-Go: Perfect for lunchboxes, road trips, or after-camp snacks.
