Summer may be over, but seafood is still on the menu. Here is a delicious dish that combines shrimp and crab with traditional Mexican fare, loaded with cheese, veggies, and of course shrimp, all wrapped in a flour tortilla and topped with a homemade creamy crab sauce.


Ingredients
Meat:
- 1 lb. cooked shrimp
- 6 oz. claw crab meat
Vegetables:
- 0.5 oz. chopped scallions
- 1/2 bell pepper (your choice of color), chopped
- 1 jalapeño, chopped
- 2 cloves garlic
Sauce/Topping:
- 1 cup shredded Mexican cheese, divided
- 3 tsp. sour cream
- 3 oz. heavy whipping cream
- 3 tbsp. butter, divided
Seasoning:
- Cumin, to taste
- Chili powder, to taste
- Garlic powder, to taste
- Black pepper, to taste
- Taco or fajita seasoning may be substituted. (You won’t need salt with the seafood and other spices.)
- Flour or corn tortillas
Directions
In a saucepan, melt 2 tablespoons of butter, then add the peppers and garlic. Once the vegetables soften slightly, add the crab meat and seasonings. Stir to combine, then add the sour cream, heavy whipping cream and half of the shredded cheese. Stir until a creamy sauce forms.
Next, sauté the shrimp in the remaining tablespoon of butter with additional seasoning, just until warmed through. Place some of the shrimp in each tortilla and spoon in some of the creamy sauce. Roll each tortilla and place it in an ungreased baking dish.
Pour additional sauce over the enchiladas. Top with the remaining shredded cheese and sprinkle with chopped scallions. Bake at 350 degrees for 15 to 20 minutes, or until the cheese is melted.
