What’s cooking: Chicken and scalloped potatoes

Chicken Scalloped Potatoes

Here is a delicious twist on a classic dish. Scalloped potatoes are a popular side dish, but when you add chicken into the mix, it creates a hearty meal loaded with flavor.

1 package of boneless skinless chicken thighs

2 large russet potatoes

2 cups of sliced mushrooms

1 small onion, chopped

2 cloves garlic, minced

1-2 tsp of extra virgin olive oil

1 32 oz container of chicken broth or stock

1 cup of heavy cream

2 tbsp of butter or margarine

1-2 tbsp of flour

Salt and pepper to taste

Garlic salt, onion salt, Italian herb seasoning to taste

Start off by heating up the oil over medium-high heat. Drop in butter and chicken and cook for about 5 minutes on each side. Remove chicken from pan and set aside. Add the sliced onions, garlic and mushrooms and sauté for about 5 minutes or until onions are translucent and mushrooms are soft. Then add flour and stir immediately. It will get lumpy, but that is normal. It is important to let it cook for about 30 seconds to a minute to get the flour taste out. Next, pour in the chicken broth a little at time, stirring as you pour. Finally pour in the heavy cream and stir again. Then reduce heat to low and let simmer.

While the base is simmering, peel the potatoes and cut into slices. Heat up the oven to 375 degrees. Next, spray a large baking dish with cooking spray and place the chicken in. Make sure they are spread out. Toss in the sliced potatoes and be sure they cover the pan evenly. Season with favorite seasoning. Pour the base over the top so that every potato is covered in liquid. Cover in foil and bake for one hour. Remove from oven and stir. Cover again and heat for another hour. Finally, take out of oven and stir once again. Place back in oven for another half hour uncovered to brown the top a little. Serve in a bowl and enjoy.

There are a variety of ways to make this dish. You can add cheese or broccoli to add extra layers of flavor, and half and half or sour cream could be used in place of the heavy cream.

These ingredient sizes make about 6 servings.
