Caretti’s Pizza
2625 N. Philadelphia Ave., Greene Township
Regular inspection: Oct. 8
Inspectors found chicken and steak held at 111.1 degrees in the grill area, below the required minimum of 135 degrees. Tomatoes and sauce were stored on the walk-in cooler floor rather than at least 6 inches above it. Both violations were corrected.
Other violations included bread stored in trash can liners rather than food-grade containers or bags, refrigerated cheese and sauce without opening dates, and food residue on the microwave’s interior ceiling. The microwave was cleaned during the inspection.
Inspectors also noted a package of apple slices on a food preparation table, a violation marked corrected, and a missing employee hand-washing reminder at the women’s restroom sink.

Other findings included refrigerated prepared foods without date markings, employees without proper hair restraints, unlabeled salt, personal items on a preparation table and egg rolls stored in containers not intended for food. The salt labeling, personal item storage and egg roll container violations were corrected.

Inspectors found chorizo thawing at room temperature on the floor and previously frozen fish stored under refrigeration without being removed from its reduced-oxygen packaging.
An employee moved from drinking a beverage to preparing food without washing their hands. An employee also drank from a cup without a lid in the kitchen.
Rice was held at 42.3 degrees, above the required maximum of 41 degrees. A back two-door cooler measured 57.1 degrees and was not maintaining the required temperature.
The person in charge could not provide documentation showing the ground beef came from an approved source. Food thermometers were not available or readily accessible.
Inspectors also found an open can of tomato puree and prepared foods, including salsa, carnitas and broth, without required date markings. Several foods were stored uncovered.

Unsalted butter next to a sandwich press measured 69.2 degrees, above the required maximum of 41 degrees.
Inspectors also found yogurt and frozen meat products stored in crates and trays on walk-in freezer and cooler floors, cooked country sausage held in reduced-oxygen packaging for about a week under refrigeration, and prepared sauerkraut, pizza sauce and barbecue sauce without date markings.
