Fall season means apple harvest and seasonal flavors, so here is an easy to make Apple Cinnamon Cake that will make your family glad it is the holiday season.
1 3/4 cup of sugar
8 oz cream cheese softened
1/2 c of butter, softened
1 tsp vanilla extract
2 eggs
1 1/2 cup of flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
2 diced and peeled apples

Heat oven to 350o. In a large bowl and using a hand mixer (or a counter mixer) blend the sugar, cream cheese, butter, and vanilla at medium speed until well blended. Add the eggs, one at a time while mixing. Then set the bowl aside.
Using a different mixing bowl stir the flour, baking powder and salt and cinnamon. Then add mixture to the sugar bowl.
To prep the apples, peel and dice apples into small chunks. Add the remaining cinnamon and sugar and stir. Be sure that all the apples are coated in the cinnamon sugar mix.
Finally, add the apples to the sugar and flour bowl and mix together.
Spray a medium sized baking pan with cooking spray and then pour in the mixture. Be sure to spread it out evenly. Place it in the oven for one hour and 15 minutes. To test that it is finished, poke in the center of the cake with a fork or a small knife. If it comes out dry, then the cake is ready. Serve with a scoop of vanilla ice cream and for a little sweet treat, add a drizzle of caramel topping. This makes 8-10 servings.
